Sauce Périgourdine is a classic French Compound Sauce made from a Demi-Glacé with Truffle Essence added and Garnished with Chopped Black Truffles.


Sauce Perigourdine is similar to a Sauce Perigueux but the major difference is how the truffles are cut and shaped. Traditionally a Sauce Perigourdine has truffles either cut into the shape of small Olives or small balls. Thick slices have also been used but that is a less traditional style for a Sauce Perigourdine.
