Sauce Romaine, also known as Sauce à la Romaine or even as Roman Sauce, is a classic French Compound Sauce made from a Demi-Glacé  flavored with sugar, white vinegar and game stock (made from venison etc.) and Garnished with Sultanas, dried Currants, and Pine Nuts.

Culinary Uses

Romaine Sauce is usually served with tongue, light meats and game.
