In this method of Clarifying Butter the butter is Simmered (covered in Introduction to Cooking Methods: Topic 11), until separation of the Butter Fat & Milk Solids occurs. The simmer also evaporates the butter’s native water content. Once the solids turn golden, strain the butter through a damp cheesecloth into a container. A damp cloth is important because a dry cloth will absorb some of the desirable butter fat. We don’t teach the simmering method at Smart Kitchen.com because it is inefficient, messy, tricky and a great way to start a fire. Fats over an open flame are very flammable.
