Knowing what foods hold best at different temperatures in the refrigerator, is Food Basics. Learn how to store main food groups, below.


Meat is best kept at temperatures between 32° F to 36° F (0° C to 2° C). Meat should always be held in sealed bottom containers. By doing so, it prevents the meats juices from cross contaminating any other product in the lower drawers. If your crisper drawers have humidity controls, meats should be held at low humidity.

Seafood is best kept at temperatures between 30° F to 34° F (-1° C to 1° C). Seafood should be held in bottom drawers in sealed containers. If you can adjust the humidity in your drawers, seafood should be kept at low humidity.

Dairy products are best kept at temperatures between 38° F to 40° F (3° C to 4° C).

Fruits and Vegetables are best kept at temperatures between 40° F and 45° F (4° C to 7° C). Remember, produce bruises easily so handle it gently. For most fruits and vegetables you can decide to leave them out or refrigerate them depending on how much ripening you want to occur. Also, how long you intend to hold the produce. If you want to ripen your fruits or vegetable more quickly leave them out covered. If you want to retard the ripening process, store your fruits and vegetables in the refrigerator. The exception would be leafy green vegetables, which must be stored in the refrigerator to remain fresh and vibrant.

If stored in the refrigerator, a higher, warmer crisper drawer, on a medium or high humidity setting (if you have the option) is best for fruits and vegetables.
