To use vegetable gums to thicken sauces, first add them to the ingredients in the sauce and mix well to dissolve (ideally in a blender), before adding in other liquid ingredients.  Often it only takes a small amount, so go slowly. Too much vegetable gum, will over thicken and/or give the sauce a "slick" feel.
