Store them in an air tight container for about 3 months in the refrigerator or 6 to 9 months in the freezer.

Culinary Uses

Raw Pine Nuts and other kinds of raw nuts like Almonds, Pistachios or Peanuts can be oven roasted. Roast raw nuts on a flat cookie sheet (lined with parchment paper if you desire) in a 350°F (177°C) oven for about 10 minutes, shaking halfway through. Use less heat if your oven runs hot.

Though oven roasting is easier to control and requires less direct interaction, check the nuts periodically. When the nuts are fragrant and golden brown, remove the pan from the oven. Transfer the pine nuts to a plate to cool.

Roasted nuts are great for a snack, in sauces like Pesto, or as a change on Salads or as topping on sweet or savory dishes.
