Smaller grills and smokers can do big things by creating coals from shorter (5”-7”) lengths of wood and/or larger (3”x 3”) chunks of wood on top of the starter charcoal. Use chips or chunks on top of the charcoal heat. To increase the smoke output and longevity of the wood, soak the chunks of wood in plain water for approximately 12 to 24 hours prior to use but make sure you have enough dry wood on hand to maintain heat.
