Trichinosis is a parasitic disease caused by eating raw or undercooked pork, beef or wild game infected with the larvae of a species of roundworm (Trichinella spiralis), commonly known as the trichina worm. Only three of the eight Trichinella species are known to cause trichinosis: T. spiralis, T. nativa, and T. britovi.

How to Prevent

Observe proper temperature control and thoroughly cook all foods. Cook all pork to an internal temperature of at least 155°F (68°C) or higher for 15 seconds. Cook all pork chops to an internal temperature of at least 145°F (63° C) for 15 seconds or longer and cook all pork roasts to the same temperature but hold them there for at least 4 minutes or more. Avoid cross contamination by using appropriate storage & handling practices. Practice good hygiene by washing hands and sanitizing equipment & all surfaces after handling raw meats.
