Varieties
  • Wheat Berries - This is the Whole Grain, minus the HuskSteamed like Rice, but it must soak overnight and takes longer to cook.
  • Cracked Wheat - Wheat Berries that are cracked between rollers. Takes less time to cook and does not require soaking. Cracked Wheat does have a short Shelf Life because of the higher Fat content.
  • Bulgar Wheat - Traditional grain of the Middle Eastern cuisine. Tabbouleh is the best-known use. It is Par Boiled and Steamed, then HulledDried, and Cracked. It is milder in flavor and easy to cook than Cracked Wheat.
Purchasing

Bulgar Wheat Comes in 4 Grinds

  1. Very fine grind and is almost always soaked or twice cooked.
  2. Considered medium, and is either soaked or cooked.
  3. Always cooked.
  4. Very coarse and is rarely seen in the U.S.
Storage

Store Wheat in a dry, cool area. Wheat will last 4-6 months if stored properly. When storing Wheat in the freezer, it will last indefinitely.
